Instant Pot Spinach Artichoke Dip
This Spinach Artichoke Dip is the perfect appetizer for a crowd! It is deliciously creamy and so easy to make: just add all of your ingredients to an Instant Pot.
Servings 10 people
Ingredients
- 1/2 cup chicken or vegetable broth
- 12 ounces quartered artichoke heart drained and roughly chopped
- 10 ounces frozen chopped spinach
- 8 ounces cream cheese
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup freshly grated parmesan cheese
Instructions
- To the Instant Pot, add the broth followed by the artichokes, spinach, cream cheese, and sour cream. Add the garlic powder, onion powder, salt, and pepper. Do not stir.
- Place the Instant Pot lid on and ensure the valve is in the "sealing" position. Set to high pressure (or "manual") for 5 minutes.
- Once finished cooking, do a quick release by carefully moving the valve to the "venting" position. Once the pressure has been released, remove the Instant Pot lid.
- Mix until fully combined and then stir in the mozzarella and parmesan cheese.
- Transfer to a bowl and serve with tortilla chips, crackers, or vegetables.
Notes
Healthier Substitutions:
– Replace cream cheese with Neufchâtel cheese (1/3 less fat)
– Replace sour cream with reduced fat sour cream or plain Greek yogurt
